Savory Herbed Oatmeal with Tomato and Sausage

 
 
 

Ingredients

2 tsp. extra virgin olive oil

1½ oz. cooked sweet Italian chicken sausage

1 cup low-sodium vegetable broth

½ cup regular rolled oats

½ tsp. salt

½ cup grape tomatoes, halved

½ cup packed fresh herbs, such as parsley and/or cilantro

½ cup packed baby arugula

1 Tbsp. pine nuts, toasted

1 large lemon wedge (optional)

 

Directions

1. In a 6-inch nonstick or cast-iron skillet, heat 1 tsp. of the oil over medium. Add sausage; cook 10 minutes or until browned on all sides. 

2. Meanwhile, in a small saucepan, bring broth to boiling over high. Stir in oats and salt; reduce heat to medium. Cook for 5 minutes or until oats are tender and most of the liquid is absorbed, stirring occasionally.

3. Thinly slice sausage. Stir sausage, tomatoes, and herbs into cooked oatmeal. Transfer to a bowl. Top with arugula and pine nuts; drizzle with the remaining 1 tsp olive oil. If desired, serve with a lemon wedge.
