Strawberry Protein Smoothie Bowls

 
 
 

Ingredients

1 12.3-oz. pkg. silken-style light tofu, drained and chilled

2 cups chopped fresh strawberries

½ cup vanilla Greek yogurt

½ cup almond butter or peanut butter

½ to ½ cup fat-free milk or unsweetened vanilla almond milk

¼ cup chopped toasted almonds

2 Tbsp. flaxseed meal

 

Directions

1. In a blender combine tofu, 1 cup of the strawberries, the yogurt, and almond butter. Cover and blend until smooth. Add ½ cup of the milk. Cover and blend until smooth, adding additional milk if needed to reach desired consistency.

2. Divide the tofu mixture among bowls. Top with the remaining 1 cup of strawberries, almonds, and flaxseed meal.
